Jorge Enrique Zúñiga grows Colombia variety at 1,850 MASL on 3 hectares in Chalguayaco, Bolivar Cauca. This 104-pound hand-selected lot from Finca Vista Hermosa was one of the winners of the Subasta por la Paz auction. Two floats to remove defects, then de-pulp, then 48 hours in ceramic open tank where the acidity sharpens and florals develop. Washed clean, then 12 days slow-drying on a parabolic dryer.
Nestled within the high-altitude terrain of Bolívar, Cauca, the Chalguayaco region stands out as a distinguished hub for specialty coffee production, utilizing its ideal microclimates and mineral-rich volcanic soil.
