About the coffee:

The coffee was processed through the honey method, and carefully dried on African beds with mucilage on for 10 days.

About the farmer:

Hacienda Copey was found in 2011 with the aim of producing hig-quality specialty coffee in the Tarrazu district of Costa Rica. They've won the Cup of Excellence twice in the past and consistently aim to produce complex coffees.

This is our second year working with Hacienda Copey.

Brewing Notes:

Water temp:

90-93C

Brew recipe:

0. 18g grounds a tad coarser
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides

You may get oak/wood notes if you open/brew too early. This has been a common thread I've found with this year's harvest. The coffee needs a few weeks for it to open up.

Rest notes:

I'd leave it alone for 4+ weeks if possible.
