Featuring Don Higinio of Las Moritas
In 1988, Don Higinio and Doña Aura planted their first Bourbon seeds on a small mountainside plot gifted by Higinio’s father. Decades later, that humble beginning grew into Las Moritas, a network of high altitude farms between 1,200–1,800 m. This Red Pacamara flourished under pine, avocado, and native forest shade.
Each lot has its own microclimate, with harvests stretching from November to April across steep hills and cliffs. An ingenious gravity fed irrigation system sustains the plants through the dry season, ensuring consistent quality year after year. The result is a coffee that reflects both the land’s wild diversity and the family’s quiet devotion.
