Roaster Notes:
Drum - This coffee gave me quite a bit of trouble. It wanted a slow start, very low weight loss, and a slower Maillard phase. That challenge proved worth it, with the profile being round and sweet, with a big punch of lemonade like acidity cutting through the middle.
