Description

Process: Washed, Cold room dried: floated and sorted for ripeness, placed in a fermentation tank with a hose that pumped in oxygen for the first 7 hours, then depulped and washed after another 41 hours, dried for 25 days in a cold room
Tasting notes: White Peach, Mixed Berries, Lilac
Cup notes: A beautifully complex, ever-evolving symphony of ripe fruit flavors, complex florals, and intense acidity. White peach and orange blossom are immediately detectable upon the first few sips, cooling into a lovely expression of mixed berries and a bouquet of flowers. Lilac, bergamot, jasmine, and many more.
