Sitting at an elevation of 1340masl, spread out over 108 hectares, Ratnagiri Estate is known for extremely well controlled fermentation and agricultural practices. Through the use of nitrogen-fixing shade trees and the intercropping of pepper and vanilla plants, the soil at Ratnagiri is kept healthy and regularly tested for nutrient levels. After this SLN9 was harvested at peak ripeness, it was then fermented in cherry in a stainless steel tank before being moved to the dark room dehydration room. In a temperature controlled room filled to the brim with stainless steel racks, the cherries are spread out and dried to lock in freshness and flavor.
Cup notes:
In the cup, we find a candied yuzu flavor that delivers a bright burst of acidity and sweetness right up front, followed by a beautifully clear and defined yellow floral tone that reminds us of dandelions and gardenia. As the cup cools, it opens up into a refreshing lemonade sweetness, which cascades into red grapes and fresh cherries that lingers long after the cup is finished.
