This lot comes from the Dida Hora Washing Station in the Uraga district of southern Ethiopia. Managed by Tesfaye Bekele, coffees at Dida Hora start with cherry collection from over 350 local smallholder farmers surrounding the town. Once cherries have been collected and sorted, they are depulped before undergoing 36-72 hours of underwater fermentation. Coffees are then dried on raised beds for 12-15 days. Tesfaye employs 4 full time, year round employees and 72+ seasonal workers. In the cup, we are hit like a bolt of lightning with an electric lemon-lime acidity, followed by a lively sparkling blackberry soda note. Starfruit and pineapple begin to rise to the surface as the cup cools, and all of the fruit notes mingle together long on the finish.
