Process: Washed: Handpicked at peak ripeness, floated and skimmed to remove defects, held in cherry overnight, depulped and fermented in clean water for 64 hours, washed a final time before being dried in parchment on raised beds for 20-25 days
Tasting notes: Starfruit, Apricot, Jasmine
Roaster Notes: I had a good feeling this coffee could take a good amount of heat, and that was proved correct from the first test roast. Very high charge energy, and keeping on that momentum until color change, stepping down aggressively pretty late in the roast, only developing for 21 seconds. This resulted in a huge amount of floral complexity and a poppin acidity, yellow fruits like starfruit and apricot, jasmine and orange blossom florals. Incredibly proud of this one!
