Part of what we specialize in at Promethium is procuring coffees in an eccentric manner. Meaning the coffees we find, roast and present are unique in their nature - often bookmarking moments in our industry or new age thinking + innovation. In the case of this Guava coffee, it's the latter, marking a unique turn in processing.

We've been aware of Juan Puerta's advanced processing work for years, first experiencing his beloved Panela Sticky coffee years ago from friends in Germany. Ever since then he's been on our short list of figures in our industry to highlight - this summer we finally get that chance to. This coffee is a perfume in a cup. She's light, SUPER soft and silky sweet. A floral orchestra if you would. I'm convinced that even the most staunch anti-co-fermenters can get behind this if they just took a chance on it. Heck do a blind cupping table if you just cannot get over the idea of experimentation. But in all seriousness this coffee is amazing and you should really give it a chance if you find yourself burnt prior (and understandably so) by bad advanced processing. Florality supreme, especially at cool.

This coffee has undergone a light intervention, being lightly fermented with mandarin oranges from the surrounding citrus farms in Quindio Colombia. I love how Juan chose to put on his local town through the processing here - add's a little bonus merit to an already amazing crop. r
