Ratnagiri Estate is an environmentally abundant corner of the majestic South Indian Western Ghats near Bababudangiri, the place where coffee in India originated. Spread over 117 hectares, Ratnagiri has an impressive yield of quality specialty coffee successfully inter-cropped with fine pepper. Ratnagiri literally means Pearl Mountains, and the dense silver oaks that tower over remarkably flavourful shade grown coffee give a silvery hue to the hills illustrating the name. Co-fermentation doesn’t always take you where you expect—and that unpredictability is part of what makes it so fascinating. Work with peach and you might expect peach to command the cup. Ashok Patre’s peach co-ferment has other ideas.
The influence of the fruit is certainly there, lending a soft, syrupy sweetness that runs quietly through the experience. But it’s the melon character that steps forward with surprising confidence, giving this Catuai a ripe, juicy personality that feels both unusual and remarkably coherent. There’s plenty of sweetness, a vibrant structure and a richness that makes the fruit feel almost tactile on the palate.
It’s a compelling reminder that co-fermentation isn’t simply about transferring the flavour of an added fruit into coffee. Fermentation creates its own sensory expression, sometimes taking the cup somewhere altogether less predictable. This one does exactly that—a peach co-ferment with a deliciously unexpected melon-forward identity.
