Description
Maria Olimpia lives in El Cedral, Santa Bárbara. She grows old varieties of Arabica trees - Bourbon and Typica - organically, on a tiny parcel of land only one hectare in size.
We began working with Maria Olimpia ten years ago, one of the benefits of having a long relationship with our producers is being there to watch their farms evolve.
Maria’s trees are exposed to varying conditions each year due to the changes brought by the seasons. She has made tweaks to her processing and sorting over the years, nowadays all the washing and drying facilities have been relocated to her backyard, being fed by a natural spring that doubles as her drinking water.
This harvest from Maria Olimpia has all the flavours that have become synonymous with her farm - think citrus florals and a dark honey sweetness.
