This natural Caturra comes from Gilmer Mejia’s Finca Ecológica Agua Colorada in Huabal, Cajamarca, Peru. The 7-hectare farm is managed with organic practices, using compost and guano while avoiding herbicides, and all cherries are picked ripe by hand under shade trees. After harvest, the coffee is dried as a natural, allowing the fruit to influence the final profile. It’s a straightforward expression of Gilmer’s approach to careful picking and simple processing.
