This exceptional Catiope from El Mirador in Huila, Colombia, is processed using a unique Pink Champagne washed method, showcasing notes of custard, strawberry, pink grapefruit, and lime. Cultivated by Elkin Guzman, this coffee undergoes meticulous anaerobic fermentation in sealed containers, enhanced with a 200-liter mother culture and selected fruits to amplify its vibrant flavors. With a high Brix level of 20%, the coffee develops a balanced, fruity profile, complemented by a controlled drying process.
