Description

Produced by Elkin Guzman at El Mirador in Huila, Colombia, this Catiope Dark Fermentation Washed process captures an ancient method used for curing, fermenting, and preserving foods, where the absence of light has a positive effect on the fermentative activity of microorganisms. Harvested cherries undergo a disinfection process using a citric acid solution, followed by an oxidation process for 24 hours, then are pulped and placed into sealed plastic bags inside sealed barrels, which are buried underground for 8 days, ensuring complete absence of light, before drying to an ideal moisture content of 10.5% to 11%.
