Description

This Gesha Gold Grand Cru Washed is defined by its precision-driven, multi-stage fermentation. Cherries are harvested by Brix level, floated for quality separation, and sealed in GrainPro bags for a 48-hour aerobic fermentation. After pulping, the coffee undergoes an additional 12-hour mucilage fermentation, building complexity before entering a controlled 60-hour anaerobic phase that develops its signature structure and clarity. After washing, the parchment dries slowly for 25–27 days across raised beds and mechanical dryers, with temperatures kept between 20–40°C to preserve delicate aromatics. Once dried, the coffee stabilizes for 20 days before milling, locking in the clean, crystalline expression that defines this Grand Cru profile.
