Description
Carlos Estrella in Buesaco, Nariño, Colombia, where his work is centered around high-elevation specialty varieties and careful farm management. Selectively picked Geisha cherries are depulped the same day without water before undergoing a 10-hour anaerobic fermentation in sealed containers fitted with gas-release valves. The coffee is then washed clean and slowly dried in solar dryers for approximately 20 days, with frequent turning to promote even drying and stability.
