From the mountains of Veracruz, La Joya’s Lot 30A Pink Bourbon is a perfect expression of how science and tradition can come together in the cup. Produced by Samuel Ronzón and Gloria Hernández at their Microbeneficio La Joya, this lot underwent a meticulous Washed Star Platino process: 240 hours of fermentation in a Fermzilla tank with a valve, followed by 13 days of carefully managed drying on African beds. The result is a coffee that feels both vibrant and composed, offering a sensory experience that moves from the gentle florals of chamomile tea to the crisp acidity of lime, the smooth depth of cacao, and the refreshing bite of green apple. More than just a coffee, this lot reflects La Joya’s philosophy merging generational farming roots with Gloria’s biotechnology expertise to create coffees that are not only traceable and intentional, but also designed with precision and care. It’s a testament to Mexico’s emerging presence in specialty coffee and to La Joya’s belief that origin is as much about innovation as it is about heritage.
