The Catiope Melaza ( Molasses ) Natural from El Mirador Farm in Huila, Colombia, is a remarkable coffee with tasting notes of cherry, molasses, raw cacao, and acai. Crafted by Elkin Guzman, this coffee undergoes an innovative Melaza Natural process inspired by lactic and anaerobic fermentation studies. Using aerobic microorganisms, the process includes a 60-96 hour fermentation with oxygenated water, maintained at 14-18°C, and 20 kilos of molasses to fuel microbial activity. This meticulous method stabilizes the pH to 3.5-4, creating a rich, complex cup with balanced sweetness and depth. Exclusively sourced, it's a true standout.
