Starlight Blend

Description

The DNA Blend just changed to Starlight Blend, which remains the same great blend, just a different name. This blend consists of a combination of Colombian and Ethiopian coffees. The Colombian part of the coffee blend offers a rich, chocolatey body, while the Ethiopian component cuts through the richness with its bright, apple fruit notes. This blend provides a velvety body and great balance between acidity and sweetness, making the Starlight Blend great for house drip coffee, espresso, or cold brew.

Colombia Huila (Washed Process):

This coffee undergoes a process that starts with manual selection of ripe red cherries, followed by the traditional washed method with variable fermentation times, ranging from 24 to 36 hours. Afterwards, the beans dry with sun exposure for 15 – 20 days — all aspects of the production process create a delightfully sweet Colombian coffee for the Starlight Blend.

Ethiopia Guji Shakiso (Natural Process):

Guji, a unique coffee region that sets itself apart from neighboring areas like Yirgacheffe and Sidama, produces distinct coffee varieties native to the landscape with a balanced, complex flavor profile that comes with them. Although it’s a rural location with accessibility challenges, woredas (districts) in Guji like Shakiso have still made names for themselves in the global market with a reputation for fantastic coffees.

The Sawana Washing Station, at 1,800 to 2,200m, is a prominent hub for processing Shakiso green coffee, whether it’s with the natural or washed process. The coffee cherries for this lot were sourced from smallholders in the community.
