As the coffee cools, the sweetness develops into notes of hard candy, while a lively acidity reminiscent of overripe fruit keeps the cup interesting. It finishes clean with elegant black tea notes that bring balance and structure.

💡 Brew Tip: For the juiciest and most expressive cup, start with a 1:16.7 ratio (e.g. 18g coffee → 300g water) at 93-94°C. Aim for a total brew time of 2:50-3:20 minutes for pour-over methods such as V60 or Origami.
A slightly higher brewing temperature will help showcase the coffee's vibrant tropical fruit character and syrupy sweetness while maintaining clarity. If you'd like even more candy-like sweetness and a fuller body, grind slightly finer and extend the brew time by 10-15 seconds.
