Description
Sergio Caro is a young producer in Urrao, Antioquia. His farm, Los Pinos, is a small .5 hectare plot at the staggering elevation of 2378 MASL. This is a separation of his Chiroso harvested in March 2026. The cup is bright and floral with notes of apricot, cardamom, maple syrup and jasmine.
Sergio began working in coffee a few years ago after working at a coffee cooperative in Urrao. Now, at the age of 29 he is motivated and excited about the future of coffee particularly after taking part in an international auction which opened his eyes to how vast the coffee world is.
Cherries are picked at peak ripeness, floated, and then left to ferment in open tanks for three days. The cherries are then depulped and fermented for another 3 days in plastic tanks before being washed and dried for 2 to 3 weeks.
