Santiago Salas (Finca La Marulanda)

Description

Santiago Salas is a 30 year old coffee producer in La Cartagena, Urrao. His Farm, Finca La Marulanda spans 2 hectares, sitting at 1800 MASL. This is a separation of his Chiroso harvested in February 2026. The cup is quite ripe and fruit forward with notes of nectarine, jackfruit, orange and coconut cream.

Santiago grew up in the countryside of Antioquia and moved to the city at 18. He always wanted to move back to the country, and in 2023 his father in law gifted him and his wife a small piece of land where he planted 400 Chiroso trees. He later purchased neighboring land from his brother in law and now has a total of 2,500 trees with 1,000 more on the way.

Cherries are picked at peak ripeness and processed using the Cochadas method. Each daily picking is depulped and added into the fermentation tank with a small amount of water throughout the week. The parchment is washed together after 4-5 days. The seeds are then dried for 12 days.
