Farm and Producer

Jardines del Edén is Felipe and Carlos Arcila's variety-focused coffee project in Quindío. The brothers also founded Cofinet, connecting their farm work with coffee sourcing and export. This lot is the farm's yellow-ripening Sudan Rume selection, grown at about 1,800 meters.

Variety

Sudan Rume is an Arabica selection associated with the Boma Plateau and has been used in coffee breeding for its genetic diversity. This lot is a yellow-ripening selection grown at Jardines del Edén. Cherry color identifies the selection here; it does not determine the coffee's flavor.

Processing

This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
