Farm and Producer

Mauricio Shattah and his wife Liliana established La Negrita near Ibagué in Tolima after acquiring the property in 2012. A retired physician, Mauricio brought an experimental approach to planting, nutrition and post-harvest work. The farm occupies a mountain valley, with coffee grown among a wider area of native vegetation and a collection of varieties processed in separate lots.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

This white-honey preparation uses three stages of anaerobic fermentation, with nitrogen flushing at three-hour intervals. After fermentation, the coffee dries with some mucilage retained around the seeds.

Drying takes place over approximately six weeks in rooms shielded from direct ultraviolet light. Fans and dehumidifiers help manage airflow and humidity, while the coffee is turned and hand-sorted twice daily.
