Farm and Producer
Alejo Castro produces this Gesha at Volcan Azul in Costa Rica’s West Valley, near Poás Volcano. The family combines coffee production with rainforest conservation in its growing areas and on the Osa Peninsula. This shade anaerobic natural selection comes from elevations of 1,500–1,700 meters.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
The coffee was left inside the fermentation tanks for 5 days, measuring temperature, brix content, acidity (ph) and time. After this, it was taken to the drying patio for 11 days and then 8 hours in a mechanical dryer (guardiola).
