Farm and Producer
Juan Peña founded Hacienda La Papaya in Saraguro, Loja, beginning coffee planting in 2010. Its dry-tropical setting makes irrigation important, and the farm uses drip irrigation alongside soil monitoring to guide cultivation.
The farm maintains dedicated seed plantings and works with agronomists on nutrition, processing and drying. Its Mejorado material has been cultivated there since 2009, with a separate seed block established the following year.
Variety
Mejorado, often sold as Typica Mejorado, is cultivated by specialty producers in Ecuador, including Finca Soledad and Hacienda La Papaya. Producers keep this selection distinct from their other varieties during cultivation and processing, allowing its character to be evaluated across different preparations.
Processing
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
