Farm and Producer
Yunguilla is Juan Peña's coffee project in Azuay, Ecuador, on the Pacific-facing side of the Andes. It is part of the same CafExporto network as Hacienda La Papaya, with planting material connected to La Papaya's seed selections. The team manages cultivation and processing before the coffee is milled and evaluated in Cuenca.
Variety
Mejorado, often sold as Typica Mejorado, is cultivated by specialty producers in Ecuador, including Finca Soledad and Hacienda La Papaya. Producers keep this selection distinct from their other varieties during cultivation and processing, allowing its character to be evaluated across different preparations.
Processing
For this natural preparation, the coffee dries inside the whole cherry. The fruit remains around the seed through drying and is removed during hulling. Careful airflow, turning and moisture control help the team manage the drying process.
