About Pillcocaja
Ana María and Nicolás Crespo run Pillcocaja in the Yunguilla Valley of Azuay, Ecuador. Coffee grows at approximately 1,650–1,700 meters under native faique trees, with water supplied by springs in the surrounding mountains.
Variety
Typica is a foundational Arabica variety with a long history in the Americas. It is a tall plant with comparatively low yields and high susceptibility to major coffee diseases, alongside strong cup-quality potential.
Processing
This preparation pairs oxygen-restricted fermentation with a washed finish. The fruit material is removed before the coffee dries in parchment. Fermentation and drying affect aroma and texture, while the washed finish can support a clearly defined cup.
