About Finca Las Margaritas, Cafe Granja La Esperanza
Las Margaritas is Café Granja La Esperanza's farm in Caicedonia, Valle del Cauca. Rigoberto and Luis Eduardo Herrera's family project cultivates multiple specialty varieties across its farms, keeping selections and preparations separate.
At Las Margaritas, Sudan Rume is grown at approximately 1,570–1,850 meters. This selection is prepared as a natural coffee.
Variety
Sudan Rume is an Arabica selection associated with the Boma Plateau in present-day South Sudan. It has contributed genetic material to coffee breeding programs and is also grown as a separate specialty selection. Growing conditions and processing determine how its quality potential appears in each lot.
Processing
Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
