Farm and Producer
Rodrigo Sanchez Valencia manages Monteblanco with his wife, Claudia Samboni, and farm manager Don Gerardo. The 18-hectare farm in Huila has its mill and drying facilities above slopes of coffee.
Rodrigo began separating Pink Bourbon after evaluating unusual trees among plantings established by his grandfather. Learning to cup helped the family connect those differences in the field with distinct lots at the mill.
Variety
Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.
Processing
Ripe cherries are sorted and depulped before dry fermentation, followed by washing with clean water. The coffee begins drying in a solar dryer and finishes on shaded raised beds. The team monitors moisture throughout drying before the coffee is prepared for storage.
