Farm and Producer

This Pink Bourbon comes through Inmaculada's Fellows Farms Project, which the Holguín family developed to work with partner growers beyond its own estate plantings. The project collaborates with farms in Huila and Cauca and helps manage processing and access to international buyers.

Inmaculada prepares this selection as a honey coffee, retaining mucilage during drying. It is part of the partner-farm program rather than a claim that the coffee grew on an Inmaculada estate plot.

Variety

Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.

Processing

Honey processing removes the cherry skin while retaining some mucilage, the sticky fruit layer around the seed, during drying. No honey is added: the name refers to that retained fruit material, which can influence sweetness and texture.
