Farm and Producer
Francy Liceth Castillo manages El Ubérrimo with her family in Arboleda, Nariño. She studied agronomy while working on the farm, graduating in 2019, and has also worked in agricultural assistance and coffee evaluation.
Her work includes the Berruecos project, which brings together coffee from nearby small producers for specialty buyers. At El Ubérrimo, farm renewal has included wider planting distances and soil-conservation practices.
Variety
This lot combines Pink Bourbon and Caturra. Pink Bourbon is a pink-ripening Arabica selection whose tested material has shown Ethiopian ancestry; its name does not establish a simple Bourbon cross. Caturra is a compact mutation of Bourbon, widely grown in Colombia. Neither variety determines a fixed cup profile.
Processing
Ripe cherries rest in bags for 70 hours, followed by flotation sorting and 48–72 hours of dry fermentation in tanks. The whole cherries begin drying on a concrete patio before moving to raised beds for approximately 20–25 days.
