Farm and Producer
Finca Hawaii is Café Granja La Esperanza’s farm near Sasaima in Cundinamarca, separate from the group’s farms in Valle del Cauca. Acquired in 2013, it became a specialized site for Mokka after planting material reached the Herrera family from Hawaii. The variety’s small cherries and low yields make harvesting and post-harvest handling particularly demanding.
Variety
Mokka produces notably small beans and relatively low yields. Café Granja La Esperanza developed its plantings from material brought to Colombia from Hawaii. The small seed size requires care in post-harvest handling.
Processing
Rigorous picking, with cherries color purple-grape. The Brix grades for the cherries must be above in range of 17 and 18 to obtain the amount of juices for a fermentation in whole cherries that last for 48 hours open air in special barrels. The temperature of the barrels is mesure every 10 hours to make sure is always in a range of 25° – 28°C.
