Farm and Producer
Alejo Castro continues his family’s coffee-growing work at Volcán Azul in Costa Rica’s West Valley. Coffee is cultivated on volcanic land above 1,400 meters, with varieties and small lots prepared through separate washed, honey and natural processes. This Milenio selection is grown at a listed elevation of 1,500 meters and prepared as a red honey.
Variety
Milenio is a first-generation hybrid developed from T5296 and Rume Sudan. Its breeding combines agronomic performance with cup-quality potential, providing a different genetic starting point from traditional varieties.
Processing
Honey processing removes the cherry skin while retaining some mucilage, the sticky fruit layer around the seed, during drying. No honey is added: the name refers to that retained fruit material, which can influence sweetness and texture.
