Farm and Producer
Mauricio Shattah and Liliana Montoya run Finca La Negrita in Tolima. Mauricio moved from medicine into coffee production, applying close monitoring to the farm's individual fermentation and drying preparations.
This lot uses Maragogype, a large-seeded Arabica variety, with a grain-based fermentation starter.
Variety
Maragogype, also spelled Maragogipe, is a natural mutation of Typica with notably large seeds and leaves. Seed size distinguishes the plant, but does not by itself determine the flavor or quality of a coffee.
Processing
Whole cherries ferment with nuruk, a traditional Korean grain-based fermentation starter, in sealed tanks flushed with nitrogen. The starter introduces a different microbial community to the fermentation. The cherries are then dried as a natural coffee, with the fruit remaining around the seeds.
