Farm and Producer
Silent Springs is a FRINJ partner farm in Moorpark, Ventura County, California. Laurina and other coffee varieties grow beneath protective tunnels adapted from the region's berry farming. These structures shelter the trees from strong winds and temperature extremes.
Variety
Laurina, also called Bourbon Pointu, is a natural mutation of Bourbon with a compact growth habit and narrow, pointed seeds. It has naturally lower caffeine than typical Bourbon; this does not make it caffeine-free or a decaffeinated coffee.
Processing
A yeast culture is introduced during fermentation to guide microbial activity. This gives the producer a way to influence consistency and aromatic development before drying.
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
