Farm and Producer
Dinkalem Ademe and his wife, Sofiya, operate the Wush Wush washing station in Ethiopia's Keffa zone. The station receives cherries from surrounding smallholders, many of whom grow coffee around their homes or harvest trees on nearby forested land. Their work with Catalyst Trade includes separate honey preparations as well as other processing styles.
Variety
This lot includes the Ethiopian selections 74110, 74165, 74212 and 75210. The numbered names identify selected planting material used by growers, rather than four guaranteed flavor profiles. The mix reflects the coffee delivered by the station's contributing producers, with cultivation and processing shaping the final cup.
Processing
Honey processing removes the cherry skin while retaining some mucilage, the sticky fruit layer around the seed, during drying. No honey is added: the name refers to that retained fruit material, which can influence sweetness and texture.
