About Finca Potosi, Cafe Granja La Esperanza
Café Granja La Esperanza is led by Rigoberto and Luis Eduardo Herrera in Colombia's Valle del Cauca. Their family's coffee history began at Potosí and expanded into a group of farms with separate variety plantings and processing programs. Java is among the varieties the team cultivates and prepares as a natural coffee.
Variety
Java has genetic ties to Ethiopian landrace material and a cultivation history that includes Indonesia and Africa. It has shown strong quality potential at altitude and offers producers another option alongside more widely planted Arabica varieties.
Processing
Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
