Farm and Producer
Mount Totumas grows coffee within a cloud-forest preserve in Tierras Altas, Chiriquí. The project began with the purchase of former pasture in 2008 and has included substantial reforestation around its six hectares of coffee.
Karin de la Rosa manages the coffee operation, from production and processing through roasting and export. Gesha is grown alongside Typica, Catuai, Caturra, and Pacamara.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
The cherries are depulped, then fermented with spring water and mosto, the juice collected during coffee-fruit fermentation. After washing, drying begins on indoor beds and finishes in a dehydrator.
