Farm and Producer

Jaramillo is one of the Peterson family's farms at Hacienda La Esmeralda in Boquete. Coffee grows on cool, shaded slopes that become steep toward the upper parts of the farm. The family expanded plantings uphill in 1997, and separating coffee from these areas helped reveal the distinctive qualities of its Gesha.

Jaramillo remains a source of the estate's small, separately harvested Gesha lots. This selection is prepared as a washed coffee.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
