About Finca El Manto Verde
Trinidad Peña Silva grows Gesha at Finca El Manto Verde in Chirinos, Cajamarca, at approximately 1,900 meters. The family's earlier Pache and Caturra plantings were damaged by coffee leaf rust. They rebuilt their coffee production with Gesha seed purchased from producer Franco Huachez.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It has high cup-quality potential under suitable growing conditions and is often associated with floral aromatics. Those tendencies do not determine the tasting notes of an individual lot.
Processing
Ripe cherries are picked and depulped, then fermented for approximately 20 hours. The coffee is washed to remove the remaining mucilage and dried in parchment. Removing the fruit before drying distinguishes this washed preparation from a natural process.
