Elida Estate, Lot Torre

Torre is a selection from Elida Estate, the Lamastus family's farm in Alto Quiel, Boquete. The family has grown coffee here since 1918. Volcanic soils, cool highland conditions, and surrounding cloud forest characterize the estate's growing environment.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. Panamanian Gesha is valued for its high cup-quality potential at altitude and often shows delicate floral and stone-fruit aromatics. Cultivation, harvest, processing, and roasting all shape how those characteristics appear in the final cup.

Processing

This washed Gesha is dried in parchment after its fruit material is removed. Dark Room Drying, or DRD, uses fans and dehumidifiers inside an enclosed room to regulate moisture removal. It describes the drying environment and is separate from the fermentation stage.
