Elida Estate, Centro Loma Lot
Elida Estate is the Lamastus family's coffee farm in Alto Quiel, Boquete, established in 1918. Its highland setting includes volcanic soils and native cloud forest near Volcán Barú. Centro Loma identifies a selection from the central part of the estate, listed at 1,780–1,820 meters.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. Panamanian Gesha is valued for its high cup-quality potential at altitude and often shows delicate floral and stone-fruit aromatics. Cultivation, harvest, processing, and roasting all shape how those characteristics appear in the final cup.
Processing
Cold Room Drying, or CRD, means the washed coffee is dried in a cold room. The cool environment slows moisture removal during drying.
Washed processing begins by removing the cherry skin. Fermentation breaks down the sticky mucilage around the seed, which is then washed away before the coffee is dried in parchment. This approach can emphasize clarity and definition in the cup.
