Process: Washed, It was fermented pulped for 48 hours at the Nuguo farm, and was brought down to the city of David to dry in a controlled room on February 21 at a temperature of 22 degrees Celsius.
Farm and Producer
Finca Nuguo is part of the Gallardo family’s coffee work in Panama. The family has grown coffee since 1960 and began planting Gesha at Nuguo in 2006. Nuguo’s coffees are processed separately at the farm, allowing individual lots to follow distinct fermentation and drying protocols.
José "Pocho" Gallardo produces this Gesha selection from Jurutungo, Chiriqui, Panama. The growing elevation for this lot is 1,800–1,950 masl.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
