Farm and Producer
Carmen Estate grows coffee in the Paso Ancho area of Panama’s Volcán region. The Franceschi family established the farm, whose planting areas lie in the Chiriquí Viejo valley. Volcanic soils, good drainage and a pattern of cool nights and sunnier days shape the growing environment.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Very ripe red cherries are selected for this natural preparation and fermented in tanks for 48 hours. The coffee then dries in the whole fruit on raised beds in the sun before the dried cherry is removed.
