Farm and Producer

Finca Deborah is Jamison Savage's Gesha farm in Volcán, Chiriquí. Coffee grows under a rainforest canopy in a highland setting with frequent cloud cover. The farm separates harvested cherries into named processing preparations, including Nirvana.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

Nitrogen is used to reduce oxygen exposure during fermentation. The controlled atmosphere changes the conditions in which the coffee ferments before the drying stage.

Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
