Farm and Producer
José Ignacio Gómez López is a second-generation coffee producer at Los Ángeles in Buesaco, Nariño. He began growing coffee in the 1990s, and the roughly nine-hectare farm now includes Gesha, Pink Bourbon and Papayo. Fruit trees and plantains grow alongside the coffee for shade and household use, with seasonal corn and beans also cultivated.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
The natural preparation keeps the cherries whole through two fermentation stages in sealed bags. Cherries are washed and sorted between stages, then dried through a combination of sun and mechanical drying. The fruit remains around the seed until the dried coffee is milled.
