About Cerro Azul, Cafe Granja La Esperanza
Cerro Azul is one of Café Granja La Esperanza's farms in Trujillo, Valle del Cauca. Led by Rigoberto and Luis Eduardo Herrera, the group grows Gesha here as part of its work with separately managed varieties and processing methods. This lot is the farm's hybrid washed Gesha preparation.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics under suitable growing conditions. Site, cultivation and processing remain important to how an individual lot tastes.
Processing
Hybrid Washed is a layered washed-style process designed to preserve clarity while building aromatic depth and sweetness through controlled fermentation. For Cerro Azul Gesha, this process is commonly described as fermentation in intact cherry followed by depulping and a second fermentation stage in parchment and mucilage before washing and drying. The result is a cup that keeps the precision and transparency associated with washed processing while adding a slightly more expressive fruit character and texture.
