Farm and Producer
Jamison Savage grows Gesha at Finca Deborah in the mountains of Volcán, Chiriquí. Frequent cloud cover and a rainforest canopy shape the farm's environment. Cherries are hand-selected at ripeness and kept separate for the estate's different processing preparations.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Echo is a cascara-infused washed coffee prepared with carbonic maceration. Cascara is the fruit skin and pulp surrounding the coffee seed; using it during processing adds another coffee-fruit component to the preparation. A carbon-dioxide-rich environment controls oxygen exposure during fermentation, and the coffee receives a washed finish before drying.
