Farm and Producer
The Navarro family grows this Gesha at Finca Las Margaritas in the Coquito area of Volcán, Chiriquí, at approximately 1,300 meters. This is a Panamanian farm, separate from the Colombian Las Margaritas estate.
Lost Origin Coffee Lab, led by Franz Zeimetz in Panama City, handles the fermentation and drying. The lab uses custom vessels and controlled drying rooms to develop individual preparations from partner farms' cherries.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
The cherries are depulped before fermentation with selected yeast cultures. Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-
011P and LOY-006P. The process lasted 13.1 days under controlled conditions in an average temperature of 8.5°C. The coffee was dried over 20.4 days in temperature
and humidity-regulated drying rooms.
